Venues and Caterers and Photographers! Oh my!

There hasn’t been a lot of forward movement just yet on the wedding. Mostly talking, hashing out ideas and of course, trying to figure out how we are going to pay for everything!

So initially, we wanted a garden party type wedding and reception, outside under the Oak Grove in Zilker Botanical Gardens. It sounds so lovely. Except, they are not taking any reservations until Oct and even then, the date is not guaranteed because they may schedule classes. They also required a $300 deposit with the balance ($900) paid day of, if not before.

On top of all of that, an outdoor wedding, which already has it’s challenges, in a Texas summer; which anyone who lives here will know, that is no joke. The parking is not great, we would need to have people park at Zilker Park and walk into the venue, which is all well and good but Zilker park is a VERY popular park. Finding parking is not exactly easy. And then finally, the gardens is located in Downtown Austin.

The more I thought about it, the more I realized, this could possibly be an absolute nightmare. So back to the grindstone I went, looking for a new venue. After *several* phone calls, I finally found a place that just sounds awesome! We are going to go look at it tonight and if we like it, lock that baby down. I will try to remember to take pictures so I can share.

While I have been dealing with that, I have also been trying to get in touch with the caterer of my favorite tea house. I knew there were going to be challenges seeing as how they were not geared up to cater small venues but I think a month with no call back or response to emails is a bit much, no?  So I finally gave up and started looking around. I found a place that sounds absolutely incredible and she responded to me in less than 24 hours!  What?!  That happens?! Sign me up!

I just sent her my wedding wish list and budget to see what we can do. She sounds quirky and fun so I really hope I can work with her. I have to admit, the caterer is probably going to be my favorite part of the whole thing. All the tastings! 😀

The photography was probably the least stressful. A friend of mine is a phenomenal photographer so there was no question that she would be doing my photos. That was probably the very first thing I locked down after the rings!

There has also been a dress change. While I love the dress I picked out, it just doesn’t have that…that umph! It doesn’t say bride at all! It’s just a nice dress. Which broke my heart a bit, I had so hoped that part of the journey was at least handled but hey, I get to go try on dresses! So that will be a journey in and of itself and I am really looking forward to it.

Foodie Friday – Chicken and Chorizo Enchiladas

I am starting to explore more and more in the kitchen and wanted to start trying my hand at mexican food.

Enter Chicken and Chorizo Enchiladas!

3 – 4 large boneless skinless chicken breasts
4 oz cooked chorizo sausage, diced
2/3 cup sour cream
Shredded Cheese
Salt and Pepper

  • Put the chicken in a large saucepan and cover with cold water. Bring to a boil and then reduce the heat and simmer for 20 minutes or until cooked through.
  • Remove the chicken from the pan and shred the meat with a fork.
  • Mix together the shredded chicken, cooked chorizo and sour cream. Season to taste.
  • Divide the mixture into the tortillas. Apply sauce of your choosing and then sprinkle with cheese.
  • Bake in the oven for approximately 20 – 30 minutes until the cheese is melted.

I used flour tortillas in this experiment and while they were tasty, I am interested to see how corn turns out. I also cheated when it came to the green verde sauce and the queso. Those both came out of a can or jar respectively.

Love me some greyhounds!

Our friends, Craig and Michelle, rescue greyhounds. They have a pair that are so adorably cute, it is not even funny. The bad part, I forgot their names. 😦



Michelle has been able to trace this one’s lineage back into the early 1800’s as her family line is all well known racers.

They are both retired now and live a quiet life in suburban Buda, Texas. Lovely animals and more often than not, happy to just have a nap. 🙂
